Cookies While You Sleep

This is recipe is perfect for the night before Christmas or any special holiday event.
Cookies While You Sleep
Makes 28
- 3 extra-large egg whites
- 7/8 cup sugar
- 1½ cups miniature chocolate chips
- Preheat the oven to 375° F.
- Beat egg whites until frothy. Add a pinch of salt and slowly add the sugar. Beat for several minutes until very stiff and glossy–the mixture should look like marshmallow fluff.
- Gently fold in 1 cup of the chocolate chips.
- Drop tablespoons onto a cookie sheet lined with parchment paper. If desired, sprinkle a few of the remaining chocolate chips on the tops of the cookies, or on just half of the cookies for contrast.
- Place in the oven on the middle rack and turn off heat immediately.
- Leave the door closed until morning.
