Cookies While You Sleep

This is recipe is perfect for the night before Christmas or any special holiday event.

Cookies While You Sleep

Makes 28

  • 3 extra-large egg whites
  • 7/8 cup sugar
  • 1½ cups miniature chocolate chips
  1. Preheat the oven to 375° F.
  2. Beat egg whites until frothy. Add a pinch of salt and slowly add the sugar. Beat for several minutes until very stiff and glossy–the mixture should look like marshmallow fluff.
  3. Gently fold in 1 cup of the chocolate chips.
  4. Drop tablespoons onto a cookie sheet lined with parchment paper. If desired, sprinkle a few of the remaining chocolate chips on the tops of the cookies, or on just half of the cookies for contrast.
  5. Place in the oven on the middle rack and turn off heat immediately.
  6. Leave the door closed until morning.
