Warm Roasted Beets and Crispy Greens with Vinegar Butter

No sooner had we tucked away the turkey when the holiday invites started flooding in. If you’re already feeling overwhelmed like I am, the thought of having to bring a dish to a potluck can be enough to make you want to crawl back into bed. So I pulled down a few of my favorite cookbooks and started perusing them for fast, easy, economical and delicious dishes. I found so many that I thought I’d share some with you!
This week the recipes are adapted from Rozanne Gold’s Cooking 1-2-3 and Christmas 1-2-3, both published by Stewart, Tabori & Chang. I love these books because they embody a “keep it simple” philosophy while not skimping on taste or presentation. As you’ve probably figured out, each recipes only needs three ingredients. How simple is that?
Warm Roasted Beets and Crispy Greens with Vinegar Butter
Serves 6
- 10-12 medium beets with greens attached, about 4 pounds
- 4 tablespoons unsalted butter
- 2 tablespoons tarragon, raspberry, or champagne vinegar
- Preheat your oven to 300° F.
- Remove beet stems and greens; set aside.
- Wash the beets thoroughly, removing any roots. Place in oven directly on the rack and roast for 2 hours, or until tender when pierced with a sharp knife.
- In the meantime, wash the beet greens. Remove the leaves and discard the stems. Dry the leaves thoroughly and then finely chop. Place on a rimmed baking sheet and bake for 25-30 minutes, or until crisp. Turn once or twice during baking. Remove from oven and sprinkle with salt.
- Melt butter in a small saucepan. Add 1 tablespoon of the vinegar and cook over high heat for 1 minute. Keep warm.
- When the beets are tender, remove from the oven. Peel and cut beets into 1/2-inch chunks. Place in a bowl. Add the vinegar butter and toss with salt and freshly ground black pepper to taste. Top with crispy greens and toss again with remaining vinegar.

Hi Mia,
Thank you for featuring this recipe. I served this on Thanksgiving Dinner and it was a “seller and a winner”! Even with the guys! My niece was looking for it on Christmas Day dinner….
I’m planning to treat everyone with Chocolat Macaroons on New Year’s Eve and with the dawning of new 365 days, I can’t wait for Table Manners. I hope to meet you in person then – that’s my Holiday wish!
