Yogurt cheese is a healthy alternative to sour cream, cream cheese, or mayonnaise. It requires some advance preparation but can be stored for up to the life of the yogurt. To make 1 cup of yogurt cheese, place 2 to 3 cups nonfat yogurt in a yogurt strainer or cheese cloth. This will remove any excess water, thickening the yogurt. Let drain 12-24 hours in the refrigerator, checking occasionally until desired thickness is achieved. Refrigerate any unused portion.
